from my recipe journal: lemon chicken

I have decided to share a few secrets from my little kitchen I am all for the sharing of foody tips and tricks. For my birthday (in march) I received a lovely "moleskine" recipe journal, which I am filling one recipe at a time. So, first up is my 'Lemon Chicken with Squashed Potatoes served with salad', I hope you like it...

What you'll need:
for the chicken: 
dried oregano
sweet paprika
a knob of butter (optional)
chicken breasts (one per person)
lemon (one between 4 people)
cherry tomatoes (I usually serve 6 per person - but you know best) 
for the potatoes: 
new potatoes
2-3 cloves of garlic (depending on your taste buds) 

1. pop the kettle on for the potatoes 
2. on a sheet of grease proof paper, drizzle olive oil, sprinkle the oregano and paprika and roll the chicken in the flavours 
3. in a frying pan brown chicken 

4. pop the potatoes in a sauce pan with the water and boil until cooked through
5. quarter the lemons and pop in a baking tray with the tomatoes and the chicken. Bake until the chicken is cooked through

6. allow the potatoes to steam dry for a couple of minutes before frying them in a pan with oil and crushed garlic 

top cooking tip: don't worry about pealing the garlic just pop it in the crusher and let it do all the work for you

ps. this recipe has been inspired from a jamie oliver 30 minute meal - which is one of the best recipe books I own
