You can't catch me I'm the gingerbread man


Yesterday, I taught the art club how to make gingerbread men and gingerbread stars! I am not really a big fan of ginger so I only put a little tsp in and a little tsp of mixed spice and they are just right for me. Above are the few that I kept for myself, the children decided to be a little more adventurous with their icing (including some gingerbread sunbathers in bikini's). 

Anyway the recipe is as follows, a great one to enjoy making with kids... 


You will need: 
115g/4oz butter (and a little extra for greasing) 
450g/1lb plain flour ( and a little extra for dusting) 
1tsp ground ginger (this will give a subtle ginger taste so adjust according to your preferences)
1tsp ground mixed spice
2tsp bicarbonate of soda 
100g golden syrup (about 4 tbsp) 
115g/4oz light muscovado sugar
1 egg lightly beaten 

to decorate: 
chocolate chips 
85/3oz icing sugar 
3-4 tsp of water 
food colouring of your choice 
plus any other things which take your fancy

1. preheat oven to 160oC/325oF/gas mark 3
2. grease 3 large baking sheets 
3. sift the flour, ginger, mixed spice and bicarbonate of soda in a large bowl


4. stir until the syrup, butter and sugar have melted and add to the dry ingredients 



5. lightly beat the egg and add to the bowl (in the haste of wanting to crack the egg we skipped this step accidentally) 


6. Mix well to form a dough (this may take some elbow grease) 


7. Roll out the dough on a floured surface and cut out your shapes


8. add chocolate chips 
9. bake for 15-20 mins and leave to cool 
10. mix together icing sugar and water and add a drop of food colouring
11. place in a piping bag and decorate the biscuits.
